Mac ‘n’ Cheese Bites

Ingredients

  • 250 Grams Of Macaroni
  • 4 Rashers Of Diced Facon
  • 30 Grams Of Butter
  • 2 Tbsp Of Flour
  • 1.5 Cups Of Milk
  • 2 Cups Of Grated Cheddar Cheese
  • 60 Grams Of Cream Cheese
  • 1 Beaten Egg
  • Paprika
  • Garlic Salt
  • Pepper
  • 0.5 Cups Of Panko Bread Crumbs

Steps

  1. Preheat oven to 210°C.
  2. Grease a mini muffin tin with oil or cooking spray.
  3. Cook 250 grams of macaroni according to package direction in a large pot.
  4. In a small pot over medium heat, combine 30 grams of butter and 2 tbsp of flour and whisk until a smooth mixture forms.
  5. Slowly add 1.5 cups of milk and increase temperature to medium-high to bring to a simmer.
  6. Add 1.5 cups of shredded cheddar cheese, 60 grams of cream cheese, garlic salt, pepper, paprika and stir until smooth and a cream like consistency.
  7. Combine pasta, cheese sauce, 4 rashers of diced facon and 1 beaten egg until everything is evenly coated.
  8. Spoon mixture into prepared muffin tin, sprinkle remaining cheddar cheese and 0.5 cups of panko bread crumbs.
  9. Bake for 17 minutes, or until golden brown.
  10. Cool in tray for 15 minutes before removing.

Favourites Puff Bites

Ingredients

  • A Box Of Favourites
  • 2 Sheets Of Puff Pastry
  • 1 Beaten Egg

Utensils

Steps

  1. Thaw puff pastry sheets.
  2. Preheat oven to 200°C.
  3. Line baking tray with baking paper.
  4. Cut each puff pastry sheet into 6 even rectangles.
  5. Place on chocolate from the box of favourites into the center of each rectangle and then wrap them up.
  6. Place each wrapped chocolate onto the baking tray and brush with the 1 beaten egg.
  7. Bake for 20 minutes until golden brown or crispy.
  8. Let cool for 3-4 minutes then eat.

Chocolate Banana Bread

Ingredients

  • 2 Bananas
  • 75 Grams Of Butter
  • 0.5 Tsp Of Baking Soda
  • 1.5 Cups Of Flour
  • 150 Grams Of Sugar
  • 1 Beaten Egg
  • 1 Tsp Of Vanilla Extract
  • A Heart’s Desire Of Chocolate Chips
  • A Pinch Of Salt

Steps

  1. Preheat oven to 180°C.
  2. In a large bowl, mash 2 bananas.
  3. In a small pot, melt 75 grams of butter until slightly browned.
  4. Add melted butter, 0.5 tsp of baking soda, a pinch of salt, and 150 grams of sugar into the large bowl and stir.
  5. Add 1 beaten egg and sir.
  6. Add 1.5 cups of flour and stir.
  7. Add a heart’s desire of chocolate chips and stir.
  8. Pour mixture into loaf tin.
  9. Bake for 55 minutes.
  10. Cut into slices and serve.

Eggless Choc Chip Cookies

Ingredients

  • 85 Grams Of Unsalted Butter
  • 0.25 Cups Of Brown Sugar
  • 0.25 Cups Of Caster Sugar
  • 2 Tbsp Of Milk
  • 1 Tsp Of Vanilla Extract
  • 1 Cup And 2 Tbsp Of All-Purpose Flour
  • 0.5 Tsp Of Baking Soda
  • 0.25 Tsp Of Salt if using unsalted butter
  • 0.5 Cups Of Chocolate Chips
  • 0.25 Cups Of Extra Chocolate Chips

Steps

  1. Preheat oven to 175°C.
  2. In a small pot, melt the butter then remove from heat.
  3. In a large bowl, combine 0.25 cups of brown sugar and 0.25 cups of caster sugar with melted butter.
  4. Stir in 1 tsp of vanilla extract and 2 tbsp of milk until combined.
  5. Sift 1 cup and 2 tbsp of all-purpose flour, 0.5 tsp of baking soda, and 0.25 tsp of salt into the bowl.
  6. Fold gently to make a dough.
  7. Fold 0.5 cups of chocolate chips into the dough.
  8. Make 12-14 roughly equal sized dough balls.
  9. Place dough balls onto a baking tray.
  10. Bake for 11 minutes, or until edges are browned but the cookies are still soft centered.
  11. Remove cookies from oven, if they are puffy, press gently on them with a back of a spoon to help them flatten.
  12. Place 0.25 cups of extra chocolate chips evenly among the cookies while they are still warm.
  13. Let cool and enjoy!

One Cup Quiche

Ingredients

  • 1 Cup Of Grated Cheese
  • 1 Cup Of Diced Facon
  • 1 Cup Of Milk
  • 1 Cup Of All-Purpose Flour
  • 1.5 Tsp Of Baking Powder
  • 1 Small Diced Small Onion
  • 5 Eggs
  • Garlic Salt

  • 1 Cup Of Any Other Vegetable (Corn, Spring Onion, Capsicum, Etc)

Steps

  1. Preheat oven to 180°C.
  2. Combine all ingredients in bowl.
  3. Pour mixture into quiche / pie tin.
  4. Bake for 50 minutes, or until golden on top and set in the middle.

Pumpkin Rice

  • 1 Medium Sized Butternut Squash Pumpkin

  • 4 Cloves Of Minced Garlic
  • 1 Large Diced Onion
  • 1.25 Cups Of Basmati Rice
  • 2 Cups Of Vegetable Stock
  • Olive Oil
  • Garlic Salt

Steps

  1. Preheat oven to 220°C.
  2. Peel, seed, and dice 1 medium sized butternut squash pumpkin.
  3. In a large bowl, toss the diced pumpkin, olive oil, garlic salt, pepper.
  4. Line a baking tray with baking paper and spread tossed pumpkin in one layer.
  5. Bake for 15 minutes until a fork can be easily poked in, then put aside.
  6. In a large pot over medium-high heat, melt 60 grams of butter.
  7. Add 4 cloves of minced garlic and 1 large diced onion and cook for approximately 5 minutes.
  8. Add 1.25 cups of basmati rice and stir to coat all pieces.
  9. Add 2 cups of vegetable stock.
  10. Increase temperature to high and bring to a boil.
  11. Decrease temperature to low and cover pot with a lid.
  12. Cook covered for 18 minutes.
  13. Remove from heat and let sit for 5 minutes.
  14. Fluff rice and stir in pumpkin, then serve.

Steps

Base

  1. Smash biscuits into a fine crumb.
  2. Melt 75 grams of butter.
  3. Mix the crumbs and butter together in a medium bowl.
  4. Press the mixture into the bottom of a spring form pan lined with baking paper.
  5. Put the pan into the freezer.

Filling

  1. Chop and blend 200 grams of straberries into a smooth puree using a food processor, then put aside.
  2. In a large bowl, beat together 400 gram can of sweetened condensed milk and 200 grams of cream cheese.
  3. Add 200ml of whipped cream and beat until it is a slightly thick, fluffy mixture.
  4. Remove pan with base from freezer and pour mixture into pan.
  5. Pour the strawberry puree carelessly over the mixture.
  6. Put the cheesecake in the freezer for about 4 hours.
  7. Remove the cheesecake from the freezer 20-30 minutes before serving and garnish with fresh strawberries.
